In a large pan, boil the florettes for 5 minutes in plenty of water, to which 1 tbsp of milk has been added. Add 1 1/2 cups water and bring to a boil. Add 1 tbsp cornflour to 1/4 cup water and dissolve well. Gradually add to the gravy and stir continuously till it resumes boiling.Boil till the gravy becomes transparent.

The protein in eggs provides steady and sustained energy because it does not cause a surge in blood sugar or insulin levels, which can lead to a rebound effect or energy "crash" as levels drop. Combine cornstarch and water and blend well. Heat corn oil in large pot and then add scallions and stir-fry for about 30 seconds. Add the soy sauce, chicken broth and rice wine and bring to a boil. Reduce heat to medium and cook for 2 to 3 minutes.

The soup is finished by adding a thin stream of beaten eggs to the boiling broth, creating thin, silken strands of cooked egg that float in the soup. Scramble the eggs and add ground black pepper, also add a little salt if desired. Stir them in gently to slightly wilt from the heat of the broth and enjoy.
